OfflineWith so many secuity programs to choose from and the many feature of each, I am not sure if I am being as safe as can be. 
I am running Avast and Clamwin.
I am on the internet often. I love to DL application files, productive programs, some not so productive (just cute fun stuff), I love games (to evaluate) etc.
My other question, is there a screen capture for text files, aside from cut and paste. Just asking.
I know I will get an intelligent answer here.

OfflineHi ebony. I wouldn't bother having two real-time AVs going at the same time. Stick with Avast (or Avira or Clamwin – whatever you are happy with) and have another as an as-needed secondary scanner – such as Malwarebytes (http://www.malwarebytes.org/
Next, I would suggest installing a browser virtualisation program like Sandboxie (http://www.sandboxie.com/
I also use the anti-keylogger KeyScrambler (the free personal version): http://www.qfxsoftware.com/
I am sure that dotTechies will have plenty of more valuable suggestions for you – and more than likely more comprehensive and knowledgeable than mine!
Your next question was about the capturing only text. I'm not sure if you mean screen capture from web pages or just generally. If you mean the former, then Firefox has some add-ons you might want to check out. I haven't used them personally, but I did a quick check and they might be worth checking out:

I'm not sure if any of these are what you're looking for, but if not, post again and I can have another look.
The one Firefox add-on that I use almost every day is Copy Plain Text (https://addons.mozilla.org/en-US/firefox/addon/134). It isn't what you're after, but it is so worth installing if you copy and paste from web pages.

OfflineYou are definitely in AV overload. One good program (I don't know anything about Clamwin, but Avast! and Avira are both very good) and one additional scanner (like the above mentioned Malwarebytes) to run only on demand should be enough.
If you are using Vista or Win7, the built-in firewall is actually very good. If you are using XP, then you would be advised to get a good firewall and disable the built-in one.
Gadwin PrintScreen works well as a general screen capture.
If you are looking the capture parts of web pages, there is a FF add-on called Aviary that I like. It capture an entire page, just the visible window, a user-selectable region, etc. And after the capture, you have a choice to save it to a file, the clipboard, or even upload it to their website to do some editing on the capture (I've never tried that option though).
