Basically all the manufacturers and/or carriers that use Android also install their own apps on the phone that are often not useful and you cannot remove them. Root access gives you more control over the phone so that you can remove the "crap" (there is a similar program to remove all the "crap" that comes installed on a new PC called PCDecrapifier).

HTC Sense is supposed to be the best of the Android overlays compared with Motorola and Samsung. But I don't have any personal experience with any of them, so take that with a grain of salt.

If I were in your position (and I wish I was) I would go with the Droid X and mod it to get rid of the MotoBlur. (Although modding the Droid X is a bit hard, there has been progress made and eventually everyone iwll figure it out
).
So, from that I hope you can make up your mind. Both are amazing phones. What you really gotta ask yourself do you want the latest and the greatest, or the not-so-new but stable? If you want latest and greatest go with Droid X. If you want not-so-new but stable go with HTC Incredible. If you want to wait, wait for the Droid 2 which has a hardware keyboard (I think it is comes out something early August).
OfflineI have had both the Droid and the HTC. I loved the Droid and all of the options but had to swith because the keyboard would not work with bigger hands and nails as it is sensitive to the touch.
HTC turned out to be a great phone for me with a styus to boot. If I could choose, I would opt for the Droid just give me a bigger touch screen and keyboard.
Try the Motorola Cliq it is a great driod phone with a 5 mega pixel camera and all of the apps one could want.

Are you talking about the original Droid? The Droid is different and the Droid X is different.
That said, I would highly recommend not getting the Motorola Cliq. It is a fail phone and if you are going with T-Mobile they offer better Android handets (MyTouch 3g Slide and Samsung Vibrant, to be precise).
