I do not.  I'm curious about it from a technical point of view, but I've never seen any app that was compelling enough for me to want to do it.  I also get decent AT&T reception and don't travel so I don't have a need to swap the SIM card.

Some apps that I love are Backgrounder, Categories (with the CategoriesSB addon), InfiniDock, and Firewall iP.  Backgrounder allows you to run apps in the background, and can be immensely useful.  Categories allows you to make folders on the springboard (CategoriesSB just makes the folders integrate better).  InfiniDock lets you put up to 10 icons on the dock.  And Firewall iP lets you block or allow any incoming or outgoing connections in any app (excluding Cydia or Rock).

Also, if you download lots of apps from cydia, CyDelete is necessary.  CyDelete allows you to uninstall cydia apps from springboard instead of having to uninstall them from cydia.
